Nutter Butter Truffles

A friend of ours made these for Christmas and we just HAD to have them again (Thanks, Marie)! I went searching for the recipe and was pleased at how such a simple recipe makes a fun activity for Aubrey, and a delicious calorie booster for us :)
Aubrey loves being in the kitchen, so she was extremely happy when she learned that today's activity involved cooking... and was ecstatic to find out that it also included chocolate and cookies! As you'll see throughout the blog, her biggest role was as taste tester!

Ingredients
  • Package of Nutter Butters (yes, the entire package!)
  • Chocolate bark, or bakers chocolate
  • 80z bar of cream cheese
  • blender and mixer to make it easier :)
First I placed all of the Nutter Butters into a ziplock bag and let Aubrey crush up the cookies. She enjoyed it at first, but did eventually get concerned that there would be no cookies left if we kept doing this... she was right! To speed up the process we later threw the cookies in a blender and that really did the trick!
Next, you take your finely crushed cookies and mix them with softened cream cheese (yes, the entire 80z... I didn't say it was a healthy recipe). I am lucky to have my stand up mixer, so really Aubrey and I just watched, though every once in a while would scrape the edge of the bowl to get it all in there!
Next, roll your dough into 1 inch balls... but watch out for sticky fingers :)
Melt your chocolate according to package instructions... Once you're chocolate is completely melted dip your balls in and completely cover them. It took me a few tries to get it right, but eventually you'll catch on. After that you're all set... You can add sprinkles to spruce it up, but since I didn't have any I did my best to add chocolate swirls on top.
Make sure to enjoy the left over chocolate!

  2. You can do the same with Oreo cookies as well!! :) Use two forks to fish the cookie mixture out of the chocolate!

    Gonna try these with the nutter butter tomorrow!!! :)
